Organ Distribution Specificity Analysis of Anti-Nutritional Factors in Common Beans

Abstract: Content or activity of Phaseolus vulgaris agglutinin (PHA),saponin,trypsin inhibitor(TI),phytic acid in leaves and pods of 13 common beans were investigated,and correlation analysis and clustering analysis were carried out. The results showed that the distribution of anti-nutritional factors in common beans existed organ specificity,PHA,TI and saponin mainly distributed in pods,and phytic acid most consisted in leaves. Four kinds of leaves' and pods' anti-nutritional factors in common beans had no significant correlation. The test group can be divided into 4 cultivar groups through clustering analysis,variety group I had a low content of anti-nutritional factors,which could be used for breeding of low-toxicity common bean varieties; variety group II had moderate content of antinutritional factors;the anti-nutritional factors content of varieties group III and Ⅳ were higher,which can be used for the further study of anti-nutritional factors' extraction and purification,or insect-resistant transgenic engineering research.
