摘要: 新橙皮苷二氢查耳酮是一类高甜低热的新型甜味剂,甜度约为蔗糖的1 500 ~ 1 800 倍,具有良好的屏蔽苦味效果和生理活性- 。介绍了NHDC 前驱体的提取及合成、橙皮苷与柚皮苷的提取、新橙皮苷的提取及合成、NHDC 的合成,同时介绍了NHDC 检测技术及其在食品工业、医药领域和饲料行业的应用。

Abstract: Neohesperidin dihydrochalcone (NHDC) is a new type of sweetener with high sweetness and low calorie,its sweetness is about 1 500-1 800 times of sucrose. It has good shielding bitter effect and physiological activity. In this paper,the extraction and synthesis of NHDC precursors,the extraction and synthesis of hesperidin and naringin,the extraction and synthesis of neohesperidin and the synthesis of NHDC were mainly introduced. The detection technology of NHDC and its application in food industry, medicine and feed industry were also introduced.
